Overview

Do you have a passion for food? A taste for the creative? Then this is the job for you! The Director of Food and Beverage is responsible for ensuring the overall quality of food and beverage products throughout the amusement park. This includes developing new creative menus and products, budget development, logistics, and adherence to health and sanitation codes. The Director also takes proper steps of risk management, and coordinating with staff to ensure operational standards are met daily.

 

Salary details: $103,200 - $137,600/yr. based on experience 

Responsibilities

  • Oversees divisional operations, including selection, training, succession planning, discipline, and recognition.
  • Maximizes the level of guest satisfaction, including quality of service, and product and cleanliness of facility.
  • Maintains excellence in sanitation standards as outlined by Health Department Regulations and Knott's Berry Farm’s operating policies.
  • Enforces all policies and procedures outlined in the Employee Guidebook and Human Resources Manuals.
  • Ensures all labor, food, beverage, and ODC budget goals are met or exceeded.
  • Meets or exceeds personnel labor budgets (labor, percentages, sales per hour worked and payroll dollars).
  • Controls the performance and productivity of manager and supervisory staff as measured by overall efficiency, appearance and profitability of their departments.
  • Prepares accurate monthly/annual budgets, including analysis of all operating reports.
  • Implements established safety, security, and loss prevention policies and procedures.
  • Ensures staff is in compliance with all local, state and federal laws.
  • Forecasts accurate business trends, by use of generated reports from accounting and operations (attendance, revenues, cost, promotions and weather).
  • In partnership with divisional teams, identifies and understands practices to drive better margins, improve per caps, and increase revenue.
  • Monitors and implements competitive industry trends, identifying best in class practices and resources.
  • Assists Capital Plan, identifying latest equipment, design, and costs.
  • Develops strategic intent, direction, and planning for owned/managed portfolio, with the franchise portfolio as required.
  • Adheres to and enforces all Six Flags and specific Park policies and procedures, including safety, attendance and EEO policies, and demonstrates commitment to customer service in all aspects of employment.
  • Field F&B Teams   Assists and directs for optimal performance, innovation, standards and training. Provideskey leadership for Food and Beverage.

  • Brands product to support image and direction of the Brand for Knott’s Food and Beverage.  Designs and launches restaurant concepts in the image of the F&B Knott’s Brand.
  • Other duties may be assigned.

Qualifications

  • 8 to 10 years leadership experience in a multi-unit environment with extension of knowledge of both front and back of house operations.
  • Strong financial and business acumen, understands ROI on F&B initiatives.
  • Computer skills, including Microsoft Windows, Word, Excel, PowerPoint, and Outlook.
  • Knowledge of accounting procedures, profit and loss statements, general ledger, point of sale systems, and daily book keeping procedures.
  • Understanding of California and Federal labor laws, proficient knowledge of California Health & Safety Code and safety regulations.
  • Full knowledge of all aspects of the food & beverage industry.
  • Prior business experience must involve high volume revenues (5 to 10 million dollar) or multi unit responsibilities with volume of $10 million annually
  • Ability to collaborate and work through a matrix structure.
  • Ability to pass a mandatory (or random) drug test, per Company policy, unless prohibited by state or provincial law.
  • Ability to pass a background check, if 18 years of age or older, which may include, but is not limited to, credit, criminal, DMV,  previous employment, education and personal references, per Company policy, unless prohibited by federal, state, or provincial law.
  • Ability to work nights, weekends and holiday periods to meet business needs.
